Woo excited for What I Ate Wednesday! Special thanks to Jenn for putting this together each week.

Before we get started with the fall season, I thought I’d share my eats from this past Labor Day weekend. I’m sure everyone devoured some goodies just like I did to soak in the last days of summer.
On Friday after my visit to Equinox, Jess and I picked up smoothies from the in-house juice bar. The lady at the counter was trying to sell us sickenly sweet pineapple smoothies, but I wanted the one with peach juice, peaches and raspberries. The woman wasn’t having my selection, but I was satisfied with my pick!
I headed to home to relax before a night on the town and made skillet lasagna adapted from this version. The looks of it didn’t make my hopes that high, but dang was that good! So filling too!
Smoothie #2 of the weekend was courtesy of Smoothie King after my night out. Lean Body for Her protein powder was mixed with strawberries and bananas for a powerful protein kick.
And who could forget those watermelon mojitos?
I also had an awesome dinner Sunday night that was as simple as can be. Skewers of chicken and peppers marinated in vanilla yogurt and roasted green beans and tomatoes. Who knew marinating chicken in vanilla yogurt would make it so moist? Brown rice on the side was also added, but I snapped the pic too quickly.
And to end it all, I made the traditional red, white and blue Americana dessert adapted from a Publix Apron’s recipe to celebrate Labor Day and the end of the summer’s plentiful season of berries.
Lastly, a blogging goal of mine is to set a consistent blogging schedule and follow up on it. The more organized I am during this crazy fall season, the better!

Hmm never thought of marinating meat in vanilla yogart…I always did greek yogart but I guess that make sense. Like honey mustart with the sweet and salty. Need to try that ASAP. Thanks for sharing!
