Mexican Wedding Cookies for Christmas

Merry Christmas Eve! Did this weekend FLY BY or what?  It was pretty low-key and relaxing over here. That’s what a weekend is all about, huh?

To prepare for Christmas, I did some light baking in the kitchen this weekend. I make some white chocolate peppermint puppy chow that was inspired by Tara’s post.

I haven’t done much cookie baking this season and wanted to test these Mexican Wedding Cookies for a bridal brunch I am planning. They came out perfectly! I omitted the pecans from the recipe.


You have to be very delicate when making shortbread cookies. They are so light! You have to slowly allow the butter and sugar to cream up and roll the dough with floury hands to make them the right size.

My sister approved. I can’t wait for others to try them and to make them for friends! They will be a fun alternative to a Christmas cookie!

Not much else happened over here. Just watching Christmas movies and preparing for the two-day holiday.

What are your Christmas Eve plans? My evening is jam-packed with a party, dinner and church! Also can’t wait to get pampered today at the salon.

It was my first time making mexican wedding cookies this weekend too! I couldn’t believe how easy they were and will definitely be making them more often. :-D Hope you have a great Christmas!!
